Crunchy Italian wedges with dips

Crispy wedges from the oven with Parmesan cheese and fresh parsley. Served with two tasty dips: one spicy with paprika and one creamy with basil and garlic. Perfect for sharing.

Ingredients:

  • 300 g crunchy Italian wedges
  • 90 g Parmesan cheese
  • Handful of fresh curly parsley

 

Dip 1:

  • 1/2 red pepper
  • 3 pieces of roasted red pepper (pickled in oil)
  • 70 g tomato puree
  • 1 tbsp oregano
  • 5 fresh basil leaves
  • Pinch of salt and pepper

 

Dip 2:

  • 150 g cream cheese
  • 3 tbsp mayonnaise
  • 1 stalk of spring onion
  • 5 fresh basil leaves
  • 1 clove of garlic
  • Pinch of salt and pepper

Preparation

Step 1. Finely grate the parmesan cheese.

 

Step 2. Preheat the oven to 200 degrees Celsius. Fry the crunchy wedges topped with 2/3 of the parmesan cheese within 5-10 until golden.

 

Step 3. Make dip 1 by adding all ingredients in a food processor and blend finely. Season with salt and pepper.

 

Step 4. Make dip 2 by chopping the spring onion and basil very finely and mixing them with the cream cheese, mayonnaise and 1 clove of pressed garlic. Season with salt and pepper.

 

Step 5. Serve the wedges topped with some more grated parmesan cheese, fresh parsley and the 2 dips.
