Loaded fries BBQ pulled pork

Comfort food with a twist: perfect as a drinks bite, to share or hearty lunch special.

Ingredients:

  • 200 g fries
  • 100 g pulled pork (see additional recipe)
  • 1/2 red pepper
  • 1/2 red onion
  • 1 stalk of spring onion
  • 50 g grated cheese
  • 3 tbsp bbq sauce
  • Pinch of salt and pepper
  • Lime slices

 

Ingredients pulled pork (large quantity):

  • 500 g pork neck
  • 15 g cooking salt
  • 25 g apple juice
  • 350 g BBQ sauce

Preparation

Step 1. Fry the fries in the airfryer at 200 degrees Celsius or deep-fry within 5-10 minutes until golden brown.

 

Step 2. Cut the red onion into thin half rings, the red pepper into small cubes and the spring onion finely.

 

Step 3. Top the fries with the pulled pork, red onion, pepper, grated cheese, bbq sauce, spring onion, salt, pepper and lime slices.

 

Preparation of pulled pork:

Step 1. Cut the pork neck into pieces.

Step 2. Mix the pork neck, table salt and apple juice and vacumise in a vacuum bag.

 

Step 3. Cook this sous vide overnight at 80 degrees Celsius.

 

Step 4. Remove the meat from the bag and drain, collecting the liquid.

 

Step 5. Pluck the meat separately.

 

Step 6. Mix the meat with 62 ml of collected liquid and the BBQ sauce.
