Tuna salad with Sweet Chili potatoes

Ingredients:

  • 450g CêlaVíta potato cubes
  • 1 tsp sweet chilli spices
  • 1 tbsp oil
  • 75 grams of lamb's lettuce
  • ½ cucumber
  • ½ red onion, cut into half rings
  • 1 avocado, sliced
  • 50 g bean sprouts
  • 1 can of tuna, drained
  • Fresh coriander, finely chopped
  • Handful of peanuts, finely chopped

 

For the dressing:

  • Juice of 1 lime
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tsp brown caster sugar
  • 1 tsp sesame oil
  • 1 shallot, chopped
  • 1 tsp chilli flakes (optional)

Preparation

Step 1: Mix the diced potatoes with the sweet chilli seasoning. Heat the oil in a frying pan and fry the potatoes for 10 to 12 minutes, until tender.

 

Step 2: Meanwhile, mix the ingredients for the dressing. Set aside.

 

Step 3: Mix the lettuce with the cucumber, red onion, avocado and bean sprouts. Season with the dressing, amount as desired. Divide the salad and potatoes between a plate and top with the tuna. Garnish with fresh coriander and the chopped peanuts.
