Tuna salad with Sweet Chili potatoes

Ingredients:
- 450g CêlaVíta potato cubes
- 1 tsp sweet chilli spices
- 1 tbsp oil
- 75 grams of lamb's lettuce
- ½ cucumber
- ½ red onion, cut into half rings
- 1 avocado, sliced
- 50 g bean sprouts
- 1 can of tuna, drained
- Fresh coriander, finely chopped
- Handful of peanuts, finely chopped
For the dressing:
- Juice of 1 lime
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp brown caster sugar
- 1 tsp sesame oil
- 1 shallot, chopped
- 1 tsp chilli flakes (optional)
Preparation
Step 1: Mix the diced potatoes with the sweet chilli seasoning. Heat the oil in a frying pan and fry the potatoes for 10 to 12 minutes, until tender.
Step 2: Meanwhile, mix the ingredients for the dressing. Set aside.
Step 3: Mix the lettuce with the cucumber, red onion, avocado and bean sprouts. Season with the dressing, amount as desired. Divide the salad and potatoes between a plate and top with the tuna. Garnish with fresh coriander and the chopped peanuts.
