Sesame potatoes with soy ginger cabbage salad and pork tenderloin

You can vary endlessly with CêlaVíta potatoes! In this recipe, they are prepared with sesame seeds, delicious in combination with a fresh cabbage salad and a pork tenderloin!

Ingredients:

For the coleslaw:

  • 1 tbsp rice vinegar
  • 1 tbsp ginger syrup
  • 1 tbsp mayonnaise
  • 1 tbsp soy sauce
  • 150 g white cabbage, cut into thin strips
  • 100 g carrot, peeled and grated
  • 1 apple, cut into thin strips
  • Pepper and salt, to taste
  • 1 tbsp chives, chopped

For the baked sesame potatoes:

  • 700 g Cêlevíta potato wedges
  • 3 tbsp sunflower oil
  • 1 garlic clove, grated
  • 1 tbsp sesame seeds, possibly mixed white and black
  • Pepper and salt, to taste

For the pork tenderloin:

  • 600 g pork tenderloin, at room temperature
  • 2 tbsp butter
  • Pepper and salt, to taste

 

Extra needed:

2 non-stick pans, aluminium foil

Preparation

Step 1:

In a large bowl, mix the rice vinegar with the ginger syrup, mayonnaise and soy sauce. Mix the sliced cabbage, carrot and apple with this. Preferably let this rest in the fridge for at least two hours. Flavour this with salt and pepper as desired.

 

Step 2:

Heat 2 frying pans; 1 for the jacket potatoes with sunflower oil and 1 for the pork tenderloin with butter. Fry the potatoes until tender according to the instructions on the packet.

For the pork loin: When the butter is bubbling out, fry the pork loin on medium heat for 10 minutes, until brown all around. Salt and pepper the pork tenderloin while frying in the pan. Then place the pork tenderloin on a plate and wrap with aluminium foil to rest until the potatoes are also golden brown.

 

Step 3:

When the potatoes are golden, add the grated garlic, sesame seeds and salt and pepper. Fry further until the sesame seeds are golden brown. Serve the sesame potatoes with the cabbage salad and the pork tenderloin, which you have sliced.

 

Tip:

Cabbage salad tastes even better if you make it a day in advance.

The potatoes can also be prepared in the airfryer, sprinkle with some sunflower oil beforehand. Baking in the airfryer takes about 18 minutes at 200 °C. At the end, add the garlic and sesame seeds and fry briefly in the airfryer.
