Potato salad

It has unexpectedly turned into a hot day and you don't feel like a heavy meal? Then go for this summer potato salad as a main or side dish. Simple, but without making any concessions in taste. Because concessions, we don't like that! This recipe was created by: Jaimy van Dijke (www.jaimyskitchen.nl)

Ingredients:

  • CêlaVíta Granny's Waxy potatoes (900 grams)
  • 1.5-2 teaspoons horseradish paste (Kuhne) or mustard
  • 3 tablespoons of low-fat yoghurt
  • 1 bunch of chives
  • 1 tub of cress
  • 1 tablespoon white wine vinegar
  • 2 tablespoons capers
  • Pinch of salt and pepper

Preparation

Step 1:

Put on a pan of salted water and boil the potatoes for about 12 minutes until tender. Note: let them boil vigorously for a while longer.

 

Step 2:

Meanwhile, make the dressing from the horseradish paste and the yoghurt.

 

Step 3:

Chop the chives and cut the cress. Mix this with the yoghurt and season with the vinegar, pepper and salt.

 

Step 4:

Drain the potatoes and rinse with cold water to stop the cooking process.

 

Step 5:

Mix the potatoes with the dressing and add the capers.
