Potato-fish salad

Ingredients:

  • 450 g Cêlavíta's squeaker slices
  • 200 g fish of your choice; fresh/pocheached, smoked, canned
  • 2 tbsp mayonnaise
  • 1 tbsp crème fraîche
  • 2 gherkins, diced
  • 1 red onion, finely chopped
  • 1/4e bunch of dill, finely chopped
  • 1/2e cucumber, to garnish
  • 1 tomato, to garnish

Preparation

Step 1:

Blanch the potato slices: Bring a large pan of water to the boil. Cook the potato slices for about 3 minutes until tender. Then spoon them onto a large bowl lined with kitchen paper to drain and cool.

Keep the nice whole slices to use for garnish. The remaining slices will be used for the potato-fish salad.

 

Step 2:

Once the potato slices have cooled down, the salad can be mixed. Mix the potato slices with the fish, mayonnaise, crème fraîche, diced gherkin, chopped red onion and chopped dill.

 

Step 3:

Spoon the salad onto a plate and shape it into a fish. Using the remaining potato slices and cucumber slices, make scales on the fish. Use the tomato as garnish to make eyes and fins.
