Traybake with chicken breast and mango, with slightly spicy yoghurt dressing
A summer traybake. All on the plate, into the oven and enjoy!

Ingredients:
- 1 kg Cêlavíta multipurpose potatoes
- 1 red pepper, cut into wide strips
- 3 tbsp sunflower oil
- Pepper and salt, to taste
- 4 stalks of spring onion, the white in large pieces, the green cut into fine rings
- 300 g chicken breast, in strips
- 1 fresh mango, peeled and diced
For the yoghurt dressing:
- 6 tbsp full-fat yoghurt
- 1/2e lemon, juice
- 1 tbsp olive oil
- 1/3e red pepper, finely chopped
- 3 g leaf parsley, finely chopped
Preparation
Step 1:
Mix the potatoes and red pepper with the sunflower oil and salt and pepper. Spread the potatoes on a spacious baking dish and bake at 200°C until golden.
Step 2:
After 20 minutes of baking time, add the strips of chicken breast and the white pieces of spring onion. Mix well on the baking tray. Bake the traybake for about 10 more minutes until the chicken breast is cooked.
Step 3:
Make a spicy yoghurt dressing by mixing the yoghurt with lemon juice, olive oil, red pepper, parsley leaf and salt to taste.
Step 4:
When the traybake comes out of the oven, sprinkle the diced mango and juniper slices over it and serve with the spicy yoghurt dressing.
