

Frittata with fresh potato slices
Use vegetable leftovers from the fridge for this delicious frittata! You make it with fresh potato slices and a mix of vegetables of your choice. Serve it with a fresh green salad for a complete meal!



Ingredients:
- 2 tbsp sunflower oil
- 450 g Cêlavíta potato slices
- 400 g chopped stir-fry mix vegetables of your choice
- 8 eggs, size m
- 50 ml milk
- 200 g old cheese, grated
- Pepper and salt, to taste
- 150 g salad mix
- Balsamic dressing, to taste
- 100 g cherry tomatoes, quartered
Preparation
Step 1:
Heat a spacious frying pan with sunflower oil. Fry the potato slices for about 8 minutes on medium heat until golden brown. Add the stir-fry vegetable mix and fry on medium heat for about 3 minutes.
Step 2:
Meanwhile, beat the eggs and add the milk, 2/3e of the old cheese, pepper and salt. Pour the egg mixture onto the potato slices with vegetables. Let this solidify on a low heat with the lid on the pan. This will take about 8-10 minutes.
Step 3:
Invert the frittata into the pan, using the lid. Slide the frittata onto the lid and drop it back into the pan. Fry the frittata for about 3 more minutes on the other side and sprinkle the top with the remaining grated old cheese.
Step 4:
Meanwhile, mix the salad mix with the balsamic dressing and the cherry tomatoes.
Let the frittata slide out of the pan onto a nice serving plate.
Slice the frittata at the table and serve with the lettuce mixture.
