Farmers' omelette with potato and vegetables, with coarse wholemeal bread

A good stuffed omelette, delicious for breakfast or lunch.

Ingredients:

  • 400 g Cêlavíta multipurpose potato, cut into small pieces
  • 150 g bacon strips
  • 6 eggs
  • 200 ml of milk
  • Pepper and salt, to taste
  • 200 g vegetables, various, cut into small pieces
  • 1 tbsp butter
  • 8 slices of coarse wholemeal bread.

Preparation

Step 1:
In a large frying pan over medium heat, brown the bacon strips.

 

Step 2:
Meanwhile, beat the eggs in the milk and add salt and pepper to this already.

 

Step 3:
Add the mixed vegetables, potato and butter to the frying pan with bacon strips, fry for about 3 minutes. Pour the milk and egg mixture into the pan. Put the lid on the pan and put the pan on medium heat. Cook the omelette for about 6 minutes.

 

Step 4:
Let the omelette slide out of the pan onto a large platter. Serve with wholemeal bread.

 

Tip: A peasant omelette is ideal for making up leftover vegetables.
