Gado Gado bowl with potatoes
Gado Gado is an Indian vegetable dish with peanut sauce and prawn crackers. We substitute potatoes for the rice.

Vegan main dish or side dish

For 4 persons

Ingredients:
- 500 g CêlaVíta floury potatoes
- Salt, to taste
- 3 eggs
- 50 g bean sprouts
- 2 pieces Little gem, loose leaves
- 150 g carrot, grated
- ½ cucumber, sliced
- ½ red and yellow pepper, cut into strips
- 300 g peanut sauce
- 1 tub of cress
- Crackers
- Optional: fried onions
Preparation
Step 1:
Boil the potatoes according to instructions on the packet with salt added to the water. Drain them afterwards and steam dry.
Meanwhile, boil the eggs for about 9 minutes. Quench the eggs in cold water and peel them.
In the egg cooking liquid, blanch the bean sprouts; submerge the bean sprouts in boiling water for 30 seconds. Drain and rinse the bean sprouts cold.
Step 2:
Take a large bowl, place the potatoes in the middle. Arrange around the different types of vegetables. Cut the eggs into quarters and place these around the potatoes too.
Meanwhile, heat the peanut sauce according to instructions on the packet.
Step 3:
Garnish the dish with cress and serve with the crackers and warm peanut sauce.
