For the dill mayonnaise:
- ½ lemon, rind and juice
- 2 tbsp mayonnaise
- 2 tbsp crème fraîche
- 5 g fresh dill, finely chopped leaves
Extra needed:
Food processor
Preparation
Step 1:
Marinate the chopped red onion rings in the red wine vinegar, sugar, water and salt and pepper. Marinate for at least half an hour, but the longer the better.
Step 2:
Make the dill mayonnaise by mixing all the ingredients together.
Step 3:
Next, make the fish burger. First, finely puree the fish and the prawn meat with the egg, salt and pepper in the food processor. From this, form the four burgers from the pureed fish.
Step 4:
Cut open the hamburger buns and drizzle with some olive oil. In a large frying pan, fry the hamburger buns on the cut-open side until golden brown. Then set them aside.
Step 5:
In a large frying pan, fry the baked potatoes according to the instructions on the packet until golden brown in butter and sunflower oil. Meanwhile, in another frying pan, fry the fish burgers in sunflower oil over medium heat until tender and brown. Fry the fish burgers for about 4 minutes on each side. Spread the burger buns with the dill mayonnaise, then place a leaf of cabbage lettuce and a slice of tomato on top. Top with the fish burger and the marinated red onion.
Serve the fish burgers with the jacket potatoes.
