Jacket potato cubes with red peppers, green vegetables and steamed cod
This quick and healthy dish combines crispy jacket potato cubes with sweet red peppers and fresh green vegetables. The light, steamed cod completes the dish, for a nutritious meal that is on the table in no time.

Ingredients:

- 800 g diced Cêlavíta potatoes
- 4 tbsp sunflower oil
- 1 red pepper, cut into brunoise
- Pepper and salt, to taste
- 2 tsp paprika powder
- 800 green vegetable mix (e.g. spinach, green asparagus, mangetout)
- 4 slices of cod (120 g per person)
Preparation
Step 1:
In a large frying pan, fry the potato cubes in sunflower oil until golden brown. When the potato cubes are golden, add the paprika brunoise, salt and pepper and fry for about 2 minutes.
Step 2:
Meanwhile, in a preheated steamer, steam the green vegetables and cod together in a bowl for about 6 to 8 minutes.
Tip: Optionally serve a sauce with it such as a herb cream sauce or Hollandaise sauce.
