Oven endive stew with spicy minced meat

Time to spice it up? Then it's time for this spicy endive and spicy mince stew! Over delicious... Or shall we say oven delicious. This recipe is a collaboration with Leukerecepten.nl

Ingredients:

  • CêlaVíta floury cooking potatoes (900 g)
  • 400 g endive, finely chopped
  • 2 cloves of garlic
  • 125 g bacon (for veggie variant: Tofu cubes)
  • 75 g grated cheese
  • 150 ml lukewarm milk
  • Lump of butter
  • Pepper and salt
  • 1 red pepper
  • 1 large pepper
  • Pinch of paprika
  • 300 grams of minced meat (vegetarian minced meat is also fine!)
  • 1 small can of tomato puree

Step 1:

Place the potatoes in a pan of boiling water and cook for about 14 minutes until tender.

 

Step 2:

Chop the garlic and red pepper and fry in a pan. Add the bacon and fry for a few minutes on high heat until slightly crispy.

 

Tip:

For kids, omit the red pepper. Want it a bit spicier? Then add a pinch of cayenne pepper to the mince mixture.

 

Step 3:

Then add the minced meat and fry until loose. Dice the pepper and fry briefly. Season the minced meat mixture with a pinch of salt, pepper and paprika. Stir in the tomato puree and add about 50 ml of water and let the mixture simmer for a while.

 

Tip:

For a veggie version, use vegetarian minced meat or tofu cubes.

 

Step 4:

Heat the oven to 220°C (or the grill setting).

 

Step 5:

Drain the potatoes and mash with a masher. Pour in the milk and add the butter. Then spoon in the endive and heat for a while so that it shrinks slightly. If necessary, add a little extra milk to make it smoother. Season the stew with a little salt and pepper.

 

Step 6:

Put the mince mixture in a baking dish and divide evenly. Spoon the stew on top and smooth with a spoon.

 

Step 7:

Sprinkle with cheese and put the stew casserole in the oven for about 15 minutes until the cheese is nicely melted, or use the grill setting for a few minutes for a nice crispy crust.

 

Tip:

This dish is also ideal for reheating or preparing in advance.
