

Smokey BBQ Pulled chicken and potatoes
The ultimate weekend recipe! Pulled chicken with potato wedges, roasted peppers, red onion and melted cheese. Irresistibly delicious.



Ingredients:
- 400g CêlaVíta potato wedges
- 2 tbsp oil
- 2 chicken fillets
- ½ tsp salt
- ½ tsp paprika powder
- ¼ tsp onion powder
- ¼ tsp cumin
- ¼ tsp garlic powder
- 60 grams smokey bbq sauce
- 1 pepper, cut into strips
- 1 red onion, cut into half rings
- 150 g grated cheese
- Optional: crème fraîche
Preparation
Step 1: Preheat the oven to 200 degrees.
Step 2: Season the chicken with the salt, paprika, onion powder, cumin and garlic powder. Heat 1 tbsp oil in a pan with a lid and fry the chicken all around until golden brown. Then add a splash of water, about 75 ml, and simmer with the lid on the pan for 30 minutes until tender.
Step 3: Meanwhile, heat the remaining oil in a frying pan and fry the potatoes for 6 minutes. Then add the pepper and red onion and fry for another 6 minutes, until the vegetables start to soften and the potatoes are almost cooked.
Step 4: When cooked, pull the chicken apart with 2 forks and mix with the bbq sauce.
Step 5: Divide the potatoes and vegetables in an oven dish, spread the pulled chicken on top and finally the grated cheese. Bake in the oven until the cheese has melted, about 5 minutes.
Serve with a little crème fraîche, if desired.
