Crunchy roast look-a-like puffed potato

Puffed crunchy roast potatoes from the oven with a spicy mince filling, roasted peppers and a fresh cream sauce of ricotta and sour cream. Topped with chives, dill and a hint of chilli.

Ingredients:

  • 6×80 g crunchy roast potato
  • 300 g minced meat
  • 1 shallot
  • 3 roasted peppers (in oil)
  • 200 g tomato puree
  • 3 cloves of garlic
  • 125 g sour cream
  • 100 g ricotta cheese
  • Handful of fresh chives
  • Handful of fresh dill
  • Pinch of salt and pepper
  • 1 tbsp chilli flakes

Preparation

Step 1. Preheat the oven to 200 degrees Celsius.

 

Step 2. Make bowls of aluminium foil and place the crunchy roast potatoes in these and top with some olive oil, salt and pepper.

 

Step 3. Bake the crunchy roast potatoes lightly golden within 15-20 minutes.

 

Step 4. Heat a frying pan and fry the minced meat in it until loose.

 

Step 5. Finely chop the shallot and roasted peppers, press the garlic cloves.

 

Step 6. Mix through the minced meat the shallot, garlic, paprika, tomato puree and season with salt, pepper and chilli flakes.

 

Step 7. Make a sauce of the sour cream, ricotta and chopped chives. Season with salt and pepper.

 

Step 8. Top the potatoes with the minced meat and over the cream sauce and top with fresh dill and chilli flakes.
