Ratatouille with potato slices
A colourful casserole with layers of courgette, aubergine, tomato and potato slices, flavoured with tomato puree, Italian herbs and fresh basil. Healthy, tasty and easy to prepare.

Ingredients:

- 150 g potato slices
- 1 courgette
- 1 aubergine
- 7 large tomatoes
- 2 jars of tomato puree
- 2 tbsp olive oil
- 2 tbsp Italian herbs
- 1 clove of garlic
- Handful of fresh basil
- Pinch of salt and pepper
Preparation
Step 1. Preheat the oven to 180 degrees Celsius.
Step 2. Thinly slice the courgette, tomato and aubergine.
Step 3. Mix the tomato puree with the olive oil, Italian herbs and 1 clove of pressed garlic. Season with salt and pepper.
Step 4. In a baking dish, put the tomato puree and in it, alternate the vegetables alternating with potato slices so you get a nice pattern.
Step 5. Pour another dash of olive oil over the baking dish and some salt and pepper.
Step 6. Bake the ratatouille for about 20-25 minutes until golden and cooked.
Step 7. Top with some more fresh basil.
